Melt the ghee, whisk in turmeric and chilli powder, then toss cubed paneer in the mixture. Set aside. Prepare spinach (microwave frozen spinach and squeeze, or blanch and squeeze fresh spinach), then chop. Blitz onion with garlic, ginger, and green chilli. Fry in ghee until golden, then add salt and turmeric, fry until caramelised, about 10 mins. Add garam masala and fry onion mix for 2 mins. Add spinach, cook 2–3 mins, add 100ml water, and stir. Return paneer to the pan, cook for 2–3 mins to heat through. Serve with lemon juice.
